Remake of a classic: chicken piccata!
This one-skillet dish features pan seared chicken with an almond flour crust in a simple lemon garlic sauce. Nutritional yeast gives a rich, cheesy flavor, without the added fat. Serve over whole-wheat pasta for a nourishing, well-balanced meal.

1/2 cup 1/2 almond flour (blanched super fine)
2 tbsp 2 nutritional yeast
1/2 tsp 1/2 salt
1/2 tsp 1/2 ground black pepper
3/4 cup 3/4 chicken stock
1 tbsp 1 arrowroot starch
2 tbsp 2 lemons
1/4 cup 1/4 capers
1 1 onion, sliced
4 tbsp 4 cooking oil, divided (I recommend olive or avocado oil)
