1 tsp 1 baking powder
3/4 tsp 3/4 baking soda
1/4 tsp 1/4 salt
1 tsp 1 ground cinnamon
1/2 tsp 1/2 ground ginger
1/4 tsp 1/4 ground nutmeg
1/4 tsp 1/4 cloves
1/2 cup 1/2 coconut oil, melted and cooled
2 2 eggs, room temperature
1 1/4 cups 1 1/4 coconut sugar
1/3 cup 1/3 unsweetened applesauce
1 tsp 1 vanilla extract
1 1/2 cups 1 1/2 carrots, peeled and shredded (plus a light chop after shredding) – could also use apple or zucchini!
Optional mix ins: 3/4 cup walnuts or pecans, raisins, or dried cranberries
4 oz 4 cream cheese (dairy free if needed)
3/4 cup 3/4 powdered sugar
