2 tbsp 2 vegetable oil (I use olive or avocado)
6 6 pre-cooked breakfast sausage (such as chicken, turkey, or veggie), sliced
1/2 1/2 onion, diced
2 cloves 2 garlic, minced
1 1 red bell pepper, chopped
2 cups 2 spinach
4 4 eggs
1/4 tsp 1/4 salt, plus more to taste
1/4 tsp 1/4 pepper, plus more to taste
1-2 tbsp 1-2 fresh chopped herbs (I like thyme, sage, and/or oregano)
